Early harvest extra virgin green olive oil is a unique oil. Its price is higher because its production is more complex and expensive than that of an oil made from ripe olives.
In fact, to produce a litre of early harvest olive oil, about 12 kilos of olives are needed, compared to normal extra virgin olive oil, which only requires about 4 kilos.
In addition, the poor harvest, due to climatic conditions, has reduced the olive harvest and has considerably increased its price.

Healthy properties
Unlike most fruits, olives are low in carbohydrates and high in fat. Despite being high in calories, they are essential for the body to function properly and help prevent many diseases.
Fats
Olive oil mainly contains oleic acid (73%), a monounsaturated fatty acid that reduces LDL cholesterol and increases HDL cholesterol levels. This has an antiplatelet and antihypertensive effect.
It also contains polyunsaturated essential fatty acids, compounds that the body cannot synthesize naturally and that we must therefore incorporate with the diet.
